Spinach and Feta Filo Pie

This pie is wonderfully delicious and super simple to make, making it a very satisfying meal!

Ingredients

4 sheets of filo pastry
1 knob of melted butter
1 bag of wilted spinach
150g crumbled feta cheese
20g grated cheddar
2 eggs
2 tbsp fresh chopped chives
1 tbsp chopped capers
Salt and pepper
2 tbsp red pepper pesto

Method

1. In a large pan wilt the spinach in 1 tbsp of water. Once wilted drain and leave to cool. When the spinach has cooled squeeze as much of the water out as possible (to avoid a soggy pie). Then finely chop.

2. Whilst the spinach is cooling melt the butter, carefully fold out 4 sheets of filo pastry and with a pastry brush, cover with butter. In a shallow flan dish put the filo butter side down, ensuring it goes to the edges of the dish. Place each sheet at an angle to the one previously placed ( so when you fold all the edges in the whole top will be covered).

3. In a large mixing bowl mix together the eggs, feta, cheddar, chives, capers, pesto, cooled and chopped spinach along with the salt and pepper. Then pour this into the pie, making sure the mix is level.

4. Next fold in the corners of the pastry to make the lid..to get a nice crispy top make the filo nice and uneven- the butter will now be on top so it will go nice and brown.

5. Bake in a preheat over at 200 degrees c for 20-25 minutes.

Serve alongside a salad and some buttery new potatoes.

This pie would also be great with some cooked chicken being added to it. I think I’ll try that next time!
